Butter Icing

Okay, I'm only posting this recipe so that if I say to ice anything with butter icing, you can reference this post. It's just easier.

Butter Icing

You Will Need:
1/4 cup of butter
2 cups of icing sugar
2 tablespoons of milk

Combine butter, icing sugar, and milk. It's best to mix with a blender or food processer.

If desired, flavour with artificial flavouring (peppermint flavouring, almond extract, e.c.t.)

You can also colour the icing with food dye.

Nut Squares

    I just wanted to say that I did indeed complete my Christmas baking goal: to make at least 6 different things. The last thing on my list was Nut Squares. I made them a couple times, but forgot to post the recipe. So here it is.

Nut Squares

You Will Need:
1/2 cup of butter
1/2 cup of brown sugar; firmly packed
1 cup of flour
2 beaten eggs
3/4 cup of brown sugar
3 heaping tblsp of cocoa
3 tblsp of flour
1/2 tsp of baking powder
pinch of salt
3/4 cup of chopped walnuts

Preheat oven to 350 F
 Blend butter, firmly packed brown sugar, and 1 cup of flour. Press the mixture into a greased 8-inch
square pan.

Combine beaten eggs, brown sugar, cocoa, 2 tblsp of flour, baking powder, salt, and walnuts.
Spread over bottom mixture.

 Bake for 25 to 30 minutes or until done.

When cool, cover with thin butter icing flavoured with 1 1/2 tsp of almond extract.
Sprinkle with sliced almonds.

Sadly, my family ate all the nut squares, so I did not get a picture for you. But, this also means that nut squares are a big hit in my house, and maybe in yours too!
