Mint Squares

Number 5 of my Christmas Baking Challenge:
Mint Squares

These are delicious! I love these so much. My Grandma makes them every year. This year I learned how to make Mint Squares. Mint squares have the bottom of a nanimo bar, mixed with a really sugary mint icing.

Mint Squares

You Will Need:
1 cup of semi-sweet chocolate chips
1/2 cup of light cream
2 cups of Graham cracker crumbs
1/2 cup of icing sugar
1/2 cup of chopped nuts

Mint Frosting
You will need:
1/4 cup of butter
2 cups of icing sugar
2 tablespoons of milk
1 teaspoon of peppermint flavouring
2 drops of green colouring (optional)

Chocolate Glaze
you will need:
1/4 cup of chocolate chips (or more)
1 tablespoon of water

Instructions
#1: Melt 1 cup semi-sweet chocolate chips and 1/2 cup light cream over low heat. Stir constantly until smooth.

#2: Mix Graham cracker crumbs, icing sugar, and chopped nuts in large bowl. Add chocolate mixture and stir well until blended.

#3:  Press into 9" pan. Chill. Spread with mint icing. Chill. Drizzle chocolate glaze  on top. Chill until firm.

This recipe is super easy and fun to make! It's a great festive treat for the holidays!
